You can use a large cookie cutter, biscuit cutter, or even a drinking glass. Repeat until you have 12 circles. Place 1 circle into pan and press down to form pie crust until muffin pan is full. Some bakers blind-bake their mini crusts with weights like rice or sugar. Place in oven to pre-bake while filling is prepared, about 15 minutes or until golden.
For pumpkin pie filling: Mix pumpkin puree, whipping cream, and maple and pumpkin syrups until well blended. Pour mixture into pre-baked pie crusts and bake filled crusts for 15 minutes (or until center is fully cooked).
