Meatballs with Bamboo Flour/No Bread Crumbs

Ingredients

2 pounds Hamburger (I like a 20% fat ratio!) I also use a hamburger made from the ribeye cut but any hamburger with an 80:20 ratio will do.

½ pound sweet Italian sausage

1-pound spicy Italian sausage

2 eggs

8 oz of shaved Parmesan cheese (divided into 6 oz and 2 oz)

½ cup Bamboo Flour

4 stewed tomatoes skinless and diced (if stewing fresh I will use the Plum tomatoes, 1 diced onion, 2 gloves of garlic and ¼ cup of fresh chopped basil leaves) Otherwise canned diced tomatoes will do. (You can substitute ¼ dried onion powder, 2 tablespoons garlic powder and 1/3 cup of dried basil leaves)

2 cloves of garlic (2 tablespoons of garlic powder)

2 tablespoons fresh oregano or 2 ½ tablespoons of dried oregano

2 tablespoons fresh sage or 2 ½ tablespoons dried sage

2 tablespoons fresh thyme or 2 ½ tablespoons of dried thyme

1 tablespoon of fresh Rosemary or 1 tablespoons of dried fresh rosemary
Directions
Take the 2 oz of Parmesan cheese, ½ cup Bamboo Flour, garlic, oregano, sage thyme and rosemary and grind all together (either using a food processor or I use my coffee grinder). Place it in a oven safe dish and toast it slightly under broiler until light lightly brown or you can smell the rosemary and the garlic.
(Put some gloves on because I like to use my hands for this one) In a large bowl mash up the hamburger, sausage, eggs and diced tomatoes. Mixture should be wet.
Add in Bamboo flour mixture this will absorb some of the moisture.
Add the 6 oz parmesan shavings (I like to add this last so I can see they are evenly distributed)
Roll meatballs and place them on a cookie sheet.
Bake at 250 for 25 to 30 minutes, you can bake at higher temperatures, but I think it dries them out.
Recipe Note
I like my meatballs about 2 to 3 inches in diameter, you should get about 21 to 24 meatballs.
I will use about 3 meatballs per person and freeze the rest for a rainy day when I don’t feel like cooking.
