Back to school season can be very exciting but can also be very stressful on parents. We want to make it easier by giving you simple sugar free lunch box recipes that you can prep the night before. We teamed up with our friend Jenni Davis over at Catch Me Cooking, to bring you 4 easy sugar free lunch box recipes that we know your kids will love! Jenni created these recipes with her kids in mind, so we know they will be a hit!
Lunch Box Recipe #1:
Peanut Butter Banana Rollup with Chocolate Drizzle
Peanut Butter and Banana Roll ups are super simple to throw together and the NuNaturals Nustevia Cocoa Syrup adds a chocolatey flavor with no added sugar.
Ingredients:
- 1 burrito size wrap
- 1/4 cup nut butter of choice
- 1 medium banana
- 1 tsp NuStevia Cocoa Syrup
Instructions:
- Spread nut butter onto wrap. Place banana on outer edge of wrap and drizzle NuStevia Cocoa Syrup on top. Tightly fold edge over banana and roll. Slice into 1 inch rounds.
Lunch Box Recipe #2:
Mini Pancake Bacon Skewers
Ingredients:
- 9 Mini Oat Fiber Pancakes (Recipe here)
- 2 bacon strips
- toothpicks
- NuStevia Pourable Maple Flavored Syrup (for dipping)
Instructions:
- Follow recipe to create oat fiber pancakes, but make them mini!
- Cut bacon strips into fourths, making 8 total 1 inch squares
- Place mini pancake, followed by bacon, pancake, bacon, and ending with pancake
Lunch Box Recipe #3:
No Bake Peanut Butter Syrup Cookies
Using only a few ingredients and 5 minutes, make a batch of these delicious no bake cookies using quick oats!
Ingredients:
- 1 1/2 cup quick oats
- 2 tbsp unsweetened almond milk
- 1 dropper Vanilla NuStevia
- 1/4 cup nut butter of choice
- 1/4 cup light butter
- dash of salt
Instructions:
- Line a baking sheet with parchment paper and set aside. Place the dry oats into a large mixing bowl and set aside. In a medium microwave safe bowl combine all other ingredients. Microwave for 1 minute. Stir until mixture is combined and creamy, then let sit for 2 minutes.
- Pour wet mixture into dry oats. Stir to cover all oats. Spoon 1 tbsp of mixture onto parchment paper. Mixture will make around 20 cookies but will vary. Refrigerate for 4 hours and serve cool. Keep refrigerated for up to 4 days.
These cookies are a great dessert for lunch! We recommend to pair it with a Turkey Cheddar Sandwich Sushi.
Lunch Box Recipe #4:
No Bake Cookie Wraps
Using 5 No Bake Cookies, line the edge of a burrito sized tortilla and throw on a few sliced strawberries for this quick lunch!
Ingredients:
- 1 burrito size wrap
- 5 No Bake Cookies (Recipe above)
- 5 sliced strawberries
Instructions:
- Place 5 cookies and sliced strawberries on outer edge of wrap. Tightly fold wrap over cookies and strawberries and roll. Cut into 1 inch rolls.
