In a small mixing bowl mash 1 ripened banana, I use my handheld mixer to make sure there are no chunks of large banana left. Crack 2 eggs directly on top. Continue mixing until banana and eggs are fully combined. Add Oat Fiber and the optional baking powder and mix well.
Heat griddle to 350 degrees and spray with nonstick spray. Pour 2-3 tbsp of batter per pancake. Cook 1-2 minutes and flip when sides lift easily. Cook for another 1-2 minutes on other side. Serve warm and hot off griddle!
