Ingredients

73g NuNaturals Bamboo Flour

64g Almond Flour

23g Egg White Protein

1 tsp Baking soda

4g Xanthan Gum
-
1 ½ tsp Pumpkin Pie Spice

¼ tsp Ground Ginger
-
½ tsp Salt
-
1 stick of Unsalted butter
-
½ cup of Sugar substitute
-
⅓ cup Brown sugar substitute
-
1 ½ cup Pumpkin Puree (not pumpkin pie filling)

2 eggs
-
¼ cup Heavy whipping cream
Directions
Add all Dry ingredients to a bowl and whisk together fully
Cream together Butter and Sugar substitutes then add in eggs 1 at a time and mix well.
Mix in heavy whipping cream and Pumpkin Puree
Slowly mix in Dry ingredients until fully incorporated.
Grease Muffin pan or use liners and fill up ¾ of the way with batter
Bake at 350 for until muffin springs back and does not dimple when touched (approx. 20-25min)
