Enjoy the taste of thin mints without the extra calories! This recipe for healthy and sugar-free thin mints uses NuNaturals Alcohol-Free Stevia 2 oz, NuNaturals Organic Cocoa Dutch Process, and plenty of healthy fats and oils. Using sugar alternatives may help curb sugar cravings and control blood sugar. Go ahead: reach for the second, third, or fourth thin mint (guiltlessly of course)!
Ingredients:
Bottom Layer
- 1 cup chocolate protein powder
- 1/2 cup NuNaturals Organic Cocoa Dutch Process
- 1/2 cup almond flour (any nut flour will work)
- 2 tsp vanilla extract
- 1 1/2 tsp mint extract
- 1 tsp liquid Alcohol-Free Stevia 2 oz
- 3/4 cup butter (or any butter alternative)
- 2 Tbsp coconut oil
- 1 cup raw chopped pecans
Top Layer
- 1/3 cup coconut oil
- 1 tsp vanilla extract
- 1/2 tsp liquid Alcohol-Free Stevia 2 oz
- 6 Tbsp NuNaturals Organic Cocoa Dutch Process
Directions:
Bottom Layer
- Melt butter in a saucepan over low heat.
- Mix all of the ingredients together (except the chopped pecans).
- Add the chopped pecans.
- Pour the dough onto a covered cookie sheet and flatten the dough until it's about 1/4 inch thick.
Top Layer
- Melt coconut oil in a saucepan over low heat.
- Add vanilla, NuStevia, and NuNaturals cocoa powder into the coconut oil. Stir until combined.
- Pour mixture over the bottom layer.
- Cut into square pieces.
- Freeze for 20-30 minutes or until hardened.
